Spicy Garlic Shrimp

Ingredients
- 24 pieces whole jumbo shrimp with or without heads
- 1 whole garlic, minced, makes about 3 tbsp
- 3 limes, juiced, about 3 tbsp
- 1 tbsp honey
- 1 tsp fish sauce
- 1 tbsp chile powder
- 1 tbsp ketchup
- 1 tbsp red curry paste
- 2 tsp salt
- 1/4 cup chopped parsley
- 1/4 cup chopped green onions
Instructions
- Using a colander, wash the shrimp. Drain. Set aside.
- In a mixing bowl, add the garlic, lime juice, honey, chile powder, red curry paste and salt. Using a fork, mix everything until well blended. Add the shrimp and toss to coat. Let it rest for 30 minutes.
- In a wok, over medium high heat, heat oil. Add the shrimp and cook, stirring often, about 7 minutes. Add the cilantro and green onions. Enjoy!
